Roasted Red Pepper & Tomato Tortellini Soup

Soup season has arrived! This is a super easy recipe, start to finish about 20 minutes including prep. It is delicious, hearty, and full of flavor.
What you need:
1 box of roasted red pepper and tomato soup (would recommend Tj’s)
1 tube of spicy sausage (can do not spicy if you don’t enjoy the spice)
2 cups of mushrooms sliced
1 box of spinach tortellini
3 cups of spinach
1 cup of chicken broth
1 1/2 cups of milk
Salt and pepper
1 table spoon of oregano
1 table spoon of dried basil
1 table spoon of cracked pepper
1 teaspoon of garlic salt
Ricotta
Directions:
In a large bowl, sauté sausage breaking up into bite size chunks
Once sausage is cooked, add mushrooms for 2 minutes stirring regularly
Turn stove top to medium and add soup and chicken broth, and all seasonings and let cook for 10 minutes
After ten minutes, add milk and spinach and cook for another 5 minutes
Cook tortellini separately, and add to soup after spinach has been added
Salt and pepper to taste, and top with a dollop of ricotta
Serve and enjoy!
