Elote Crema Corn

This is such a delicious and easy side to pair with a number of dishes! It’s simple, and full of flavor.


What you need:

Cooked corn (can be off the cob or frozen)

1 table spoon of olive oil

1 table spoon of elote seasoning

1 table spoon of chili lime seasoning

2 table spoons of cream

1/2 a cup of grated cojita cheese

Cilantro


Directions:

On high heat, pour olive oil into skillet, followed by the corn kernels

Sauté until the corn begins to crisp and char

Add the elote and chili lime seasoning and mix into the corn until the corn is coated and cook for another 5 minutes

Add the cojita cheese and cream right before serving and toss and top with cilantro

Serve and enjoy!
