Parmesan Breaded Grilled Zucchini

This is one of my go to veggie sides! So easy and so simple - if you want whole 30 rendition of this sub breadcrumbs for crushed almonds and no cheese.
What you need:
One zucchini per person
1 teaspoon of Olive oil per zucchini
Garlic salt
Salt and pepper
Bread crumbs
Parmesan cheese
Directions:
Thinly slice Zucchini
In a pan on medium, add sliced zucchini, olive oil, garlic salt (I always am generous with garlic salt) and let cook
Once zucchini is browning, flip to other side and allow to brown (about 4 minutes per side)
Coat with bread crumbs (about 2 table spoons per zucchini) and top with cheese
Cover and let sit for 5 minutes so cheese can melt and enjoy!!
