Whiskey Seared Beef Tips

THIS IS EVERYTHING. This is such an incredible meal that I think might be the best creation of mine yet. It is easy, but so delicious. Perfect for a fancy occasion or just a night in! I use the insta pot to make it, but if not you could use a dutch oven, it would just take a lot longer.
What you need:
Serving size 4
1 lb of non marinated beef tips (trader joes has a good simple one already cut up)
1/2 a cup of whiskey
1 teaspoon of garlic salt
2 table spoons of Worcestershire sauce
3 cloves of garlic
4 cups of beef broth
1 carton of mushrooms sliced
1 red onion chopped
Olive oil
1/4 cup of chopped Parsley
Salt and pepper
Directions:
Place your beef tips in a bowl and add 1 table spoon of Worcestershire sauce, most of the whiskey (save a little for the end) and marinate for two hours
Turn your insta pot to sauté setting and add 2 cloves of garlic - minced and the olive oil allowing to sauté for two minutes
Add the beef tips, saving the marinade and sear the beef tips in the garlic until all sides of the beef tips begin to have a sear on them
Add the excess marinade into the insta pot, along with the red onion and 2 cups of beef broth
Set the insta pot on meat stew pressure cook setting for 35 minutes and allow to pressure cook
Release the pressure on the pressure cooker, and then scrape the bottom of the pressure cooker to get the flavor from the base of the pot
Add the rest of the beef broth, all of the mushrooms, and half of your parsley
Place on simmer mode and cover and allow to simmer for 10 minutes all together
Serve over mashed potatoes or any desired starch, and top with remaining parsley! Salt and pepper to taste
