Charred Seasoned Asparagus
This was so fun to create. It is such a beautiful side, perfect for a special dinner or for a nice night at home.
What you need:
1 bundle of thicker asparagus
Lemon Pepper Seasoning
Olive Oil
Fresh Mozzarella
Cherry Tomatoes
Balsamic Glaze
Salt and Pepper
Micro Greens or Basil for topping
Directions:
Cut cherry tomatoes in half, and cut the mozzarella into small slivers, and lightly salt and pepper all of it
In a cast iron skillet - I used a ribbed one - heat on high heat (if you don’t have one you can use a normal skillet)
Drizzle olive oil generously on the pan, and also add a little bit of lemon pepper seasoning to the pan
Lay asparagus down one by one once the skillet is hot, and then add more seasoning and olive oil
Cook the asparagus until it begins to char and then flip over to char the other side - only cook for about 7 minutes to keep the asparagus crisp and not soggy
Remove asparagus and lay on serving dish
Quickly sear the mozzarella and tomatoes on the skillet and then top the asparagus with mozzarella, and then the tomatoes
Drizzle balsamic reduction over the top, and add basil or micro greens to finish
Serve and enjoy!
