Caprese Frittata


I absolutely love this bacon caprese frittata! It is perfect for a brunch and always impresses! This was inspired by what was in our garden and fridge & it does not disappoint!


What you need:

10 eggs whipped

1 cup of basil chopped

6 pieces of bacon cooked and chopped

Ricotta

Cheddar cheese

1/2 cup of milk

Salt and pepper

1 cup of chopped cherry tomatoes


Directions:

Preheat oven to 350 degrees

Combine 1/2 cup of cheddar cheese, milk and eggs into a bowl

Oil baking pan and pour egg mixture into the baking pan

Evenly add chopped tomatoes & bacon to eggs

With a spoon ball ricotta into small portions and spread throughout the eggs

Spread basil through the bake, and then top with cheddar cheese

Bake for 45 minutes
