Loaded Potato Wedges

My Mother-in-Law makes the best potato wedges and these were inspired by her! These are a great side for a BBQ or can go well with so many dishes!

What you need:

1 Russet Potato for every 2 persons

Serving size for ingredients - 4 persons

2 tables spoons of olive oil

1 clove of garlic minced or pressed

1 teaspoon of sea salt & cracked pepper

1 teaspoon of chili flakes

1 tablespoon of Parmesan

Directions:

Preheat oven to 425

Slice potatoes length wise into halves, and then quarter the halves so they are long and thick wedges

Lay parchment paper on baking pan and spray olive oil spray or non stick spray, and then place wedges on the pan

Combine olive oil, garlic and seasonings in a bowl and mix evenly

With a brush, brush on the oil and seasonings onto the potato wedges

Bake for 35 minutes or until desired crispiness!
