Salsa Lulú Breaky Tacos

All the tacos all the time please. These breakfast tacos are so yummy, and a simple easy start to the morning!


What you need:

Serving Size 4 tacos

4 flour tortillas

4 eggs

1 cup of cheddar cheese

Salsa verde

8 strips of bacon

1/2 a white onion

1 potato

Olive oil


Directions:

Preheat oven to 385, and place bacon on a baking sheet and bake for 15 minutes until bacon is crispy

Cut potato into small cubes and in a skillet heat on high with olive oil until potatoes begin to crisp

Add sliced onion to potatoes and olive oil, and add 2 table spoons of water, cover and let simmer stirring until onions begin to caramelize with potatoes

Set onions and potatoes aside, and in the skillet, scramble eggs, adding 1/2 the cheese

On your tortillas add the rest of the cheese and heat for 3 min in the oven until the cheese is melted

Top tortillas with eggs, potatoes and onions, two strips of bacon, cheese, and salsa verde

Top with avocado, sour cream, and cilantro if desired and enjoy!
