Twice Baked Roasted Potatoes

Need a way to dress up a simple dish? This is an easy way to have a special side at the holiday table, while being super easy and tasty! The potatoes are soft on the inside from being boiled, while being full of flavor and crispy on the outside from baking!
What you need:
Serving size 4
1 Russet potato per person, so 4 potatoes
3 table spoons of butter
1 table spoon of chopped rosemary
1 teaspoon of minced garlic
1 teaspoon of cracked pepper
1 teaspoon of paprika
1 teaspoon of salt
1 small onion chopped
Directions:
Preheat oven to 425
In a large bowl, fill with water and bring to a boil
Cut potatoes into smaller cubes, and boil in water for 15 minutes
Drain potatoes, and lay in a baking pan with onion
Melt butter, and combine all seasonings in one bowl with butter and mix
Coat potatoes and onion in the seasoning and butter mix
Bake for 35 minutes or until potatoes are crispy
